Low fat Fettuccine Carbonara

For this recipe, I used spinach fettuccine pasta. You could use any kind you like.


Ingredients:
1 lb. fettuccine pasta
3 tabs olive oil
2 cloves of garlic finely minced
2 large eggs
1 cup grated Parmesan cheese, divided
1/4 cup finely minced parsley
Salt & pepper

Preparation:
Bring a large pot of salted water to a boil. Cook the pasta as directed on package.

In a large cold skillet, combine olive oil and garlic and sauté on low medium heat. Meanwhile, combine eggs, parsley, half the Parmesan cheese, salt & pepper in a bowl and beat until well blended.

When the pasta is cooked, drain, reserving about 1/2 cup cooking water, and immediately add to the skillet with the garlic. Place over low heat and toss for 1 minute. Turn of the heat and stir in the egg mixture. Mix thoroughly until combined. Add pasta cooking water as needed until a creamy sauce forms.

Add the remaining cheese and toss again to coat.

Serve immediately. Enjoy!!

Cook Time: 15 minutes
Total Time: 25 minutes
Yield: 4 small servings
