Tandouri-Style Chicken

Tandouri Chicken is a classic Indian dish that is easy to adapt and make at home with your own twist. It is made by marinating chicken in yogurt and spices like cumin, paprika and coriander. Also using fresh garlic and ginger makes all the difference.       




Ingredients: (4 servings)
2/3 cup plain yogurt
1 ½ tsp each cumin, paprika and coriander
1 tsp salt
1 tbsp fresh ginger
3 cloves of garlic, grated
2 tbsp olive oil or vegetable oil
4 skinless chicken breasts

Directions:

Wash and pat dry chicken breasts. Cut deep slits in the flesh to allow the marinade to penetrate. 

In a large bowl, mix together yogurt, spices, ginger, garlic and olive oil.

Place the chicken in the bowl with marinade and mix well; making sure each piece of chicken is fully coated.

Cover the bowl with plastic wrap and refrigerate at least 4 hours.

Preheat oven to 400 F degrees.

Line a backing sheet with aluminium foil and then place a grill rack on top. Place the chicken breasts over it leaving space in between each peace.

Bake the chicken for 20 minutes, then turn the peaces and bake for another 20 minutes.
Serve with your favourite side dish.
