Rice Paper Sushi Rolls

Rice paper sushi is a skinny way to satisfy your sushi craving and keep away from the sodium overload and...white rice.




Ingredients: (1 serving/2 sushi rolls)
2 rice papers, round
1/2 sheet Nori seaweed, divided
2 imitation crab sticks (from TNT/Chinese store)
4 lettuce leaves,
Cucumber, sliced thinly
½ avocado, sliced

Directions:

Place some warm water in a plate and soak the first rice paper until soft. Lay carefully on a clean dish towel and place the ingredients in the top side.

Place the rice paper's top side over the ingredients, then fold sides in, and roll up to the end.
Do the same with the second rice paper.

Serve immediately with some "low sodium" soya sauce and wasabi paste.
If saving for later, cover Rice Paper Sushi with plastic wrap and refrigerate.
