Roasted Pepper & Hummus snack

Roasting peppers under the broiler is an easy way to give them a nice grilling flavour.
I usually grill 3 or 4 peppers at once, peel them and keep them in a container in the fridge, for up to 5 days. Then I use them in my sandwiches, salads and snacks.



Ingredients: (1 serving)
1 medium pepper, any color you like
½ tsp cumin
½ tsp garlic powder
Salt & pepper to taste
Splash of olive oil
1 tbsp hummus (I make my own from this website)
1 rice plain cake or crostini

Directions:
Preheat your oven broiler.
Cut pepper in half. Remove the seeds and place it under the broiler, skin side up), for 6 to 10 minutes or until blackened. Then, for an easy peeling, wrap pepper with foil to cool.
After peeling the pepper, cut it into strips and season it with cumin, garlic, salt and pepper.
Spread the hummus on the rice cake or crostini, top it with pepper and drizzle with some olive oil. Delicious!!
