Scrambled Eggs with Smoked Salmon and Spinach-Skinny Simple Breakfast-Sunday


This is the perfect breakfast for a lazy Sunday morning. I just love this combination of eggs, spinach and smoked salmon. I do add Italian seasoning, but really you can add any of your preferred herbs, like chives, parsley…etc.

Scrambled Eggs with Smoked Salmon and Spinach works also for lunch or dinner; instead of the toast, I add a side of sweet potato fries or sauteed mix vegetables. 






Ingredients: (2 servings)

1 & 1/2 tbsp. olive oil
4 egg whites
4 to 6 smoked salmon thin slices
1 cup chopped fresh spinach
Salt and pepper to taste
2 slices whole wheat baguette or English muffin, toasted
1 tbsp. Italian seasoning (optional)
2 tbsp. low fat shredded cheese

Preparation:

Heat a medium non-stick pan over medium heat. Add olive oil, spinach and sauté until wilted.

Move the spinach to one side of the pan. In the other side of the pan, add ½ tbsp. olive oil and cook the white eggs until done, stirring for about 2 minutes. Season with salt and pepper.
Turn of the heat. Add smoked salmon and mix with the spinach and the eggs. Sprinkle Italian seasoning and cheese on top if using.

Spoon equally onto toasts and serve.
