Sweet potato, avocado, hummus and crunchy bread. This combination is so tasty and colors are amazing!!!
1 small-medium sweet potato, washed and cut into ½ inch thick slices.
2 tbsp Hummus (I make my own)
½ avocado, sliced
Olive oil
Sea salt to taste
1 whole wheat tortilla (6”) or any sliced bread you like.
Directions:
Heat your oven 400 F. In a bowl, toss together sweet potato slices, olive oil and sea salt.
Place on a baking sheet and roast turning once, until tender.
Spread Hummus on the tortilla and then cut it in half.
Lay pieces of roast sweet potato on one half of tortilla then avocado and then the other half on top.
Grill the sandwich in a panini grill or a regular grill pan, until golden and crispy.
Drizzle some olive oil on top…Delicious!!
