Those Grilled
Cheese Sandwiches, from one of the Clean
Eating Magazine, were one of my first recipes to try.
They’re skinny,
delicious and great for any time of the day. My little
family likes to accompany them with a nice healthy soup.
Ingredients: (4
servings)
1/2 cup canned black
beans, drained and rinsed
1 tbsp fresh cilantro, chopped
4 oz low fat cheese (I used TexMex)
1 large boneless, skinless chicken breast, grilled
½ whole wheat French baguette

Cayenne pepper (optional)
Directions
Place beans, 1/8
cup of water and cilantro into a food processor bowl. Blend until smooth. Add sea
salt and cumin. Adjust seasoning to taste and set aside.
Slice the 1/2 baguette into 16 slices (1/4 inch thick) and lightly brush one side with olive oil.
Place the slices on a tray, misted side down.

Spread 1 tsp beans spread onto 8 of the baguette slices. Top remaining with 1 tbsp cheese and 1 tbsp chicken, then put them together to form 8 sandwiches.
Preheat a non-stick skillet over medium heat. Cook sandwiches 2-3 minutes on each side, until golden brown.
Serve immediately.
