It is a melt-in-your-mouth Pizza; Crispness from the tortilla wrap crust, touch of sweetness from caramelized peppers and creaminess from the Brie.
2 small whole wheat tortilla wrap.
1 orange pepper and 1 yellow pepper, julienned
1 to 2 tbsp olive oil
Salt & pepper
Low fat Brie cheese, sliced
1 green onion, sliced
In a large skillet, heat olive oil over medium-high heat. Add peppers, salt & pepper to taste. Turn the heat to medium low and cook stirring constantly, until peppers are soft and caramelized. Add some drops of water if it’s too dry.
Preheat the oven to 200c (400F).
Place tortillas on a baking sheet and spread over caramelized peppers. Add sliced low fat Brie cheese.
Bake for 8-9 minutes or until the base is crisp and the cheese is melted.
Sprinkle with onion and cut into triangles.
