Curried Black Beans Patties with Yogurt Sauce
These Curried black beans patties are so tasty; sautéed onion and garlic combined with the curry powder bring up a nice flavour. These patties are so good for lunch. I like to eat them as a sandwich with whole wheat pita bread and some of the yogurt sauce.

Eggplant Frittata
Eggplants or aubergines are
naturally low in calories, are fat free and are excellent source of fiber. Yesterday, I
made a delicious skinny frittata with buttery sautéed
eggplants, garlic and parsley...perfect for breakfast, lunch, snack or
dinner!!

Skinny Banana Coconut Smoothie
After sharing my
Avocado Banana Almond smoothie, I thought I would post all my skinny, homemade smoothies.
My morning snack is always a healthy, yummy smoothie, full of vitamins and
minerals…excellent boost of energy.
Now you might
say everybody knows how to make a smoothie…you’re right, but it doesn't hurt to
know how others’ smoothies look like and get some new ideas and twists.
The best way to
make this smoothie is to use a frozen banana; it gives sweetness and
creaminess to the smoothie. Also, by using dried unsweetened coconut flakes, you end up with a natural flavour and a crunchy texture.
I use lactose
free 1% milk because you get to taste the coconut flakes and the creamy banana.
You can use any unflavored milk, and I say that because I tried it with
coconut milk which has this overpowering flavour of coconut and it just covered
the natural flavour of the coconut flakes I was looking for.

Moroccan Coconut Cookies
Moroccan Coconut
Cookies are kind of macaroons, with a gooey texture in the inside and a crisp
crust in the outside. They’re my favourite since I was little girl, asking my
mom to make them for us.
Traditionally, those
cookies are made with finely grated coconut, but I prefer to use coarsely chopped
coconut. And because the dough is sticky we use orange blossom water to shape
the cookies which gives them a nice flavour, in addition to the lemon zest.

my favorite for breakfast or lunch. I eat them with veggies, sweet potato

Scrambled Eggs with Smoked Salmon and Spinach-Skinny Simple Breakfast-Sunday
This is the
perfect breakfast for a lazy Sunday morning. I just love this combination of
eggs, spinach and smoked salmon. I do add Italian seasoning, but really you can
add any of your preferred herbs, like chives, parsley…etc.
Scrambled Eggs
with Smoked Salmon and Spinach works also for lunch or dinner; instead of the
toast, I add a side of sweet potato fries or sauteed mix vegetables.

Apple Cake with Cinnamon and Almonds
Since last week,
I’ve been checking online all kind of new fall recipes. Pumpkin, apples, spices…so
many delicious dishes and treats to choose from.
Yesterday, I
went back to my Fresh Blueberries Cake, and I made it with apples and added
some cinnamon. It is still a
non fat, skinny, moist and tender cake.
Now the addition that takes this cake to a higher level is Almonds. I sprinkled silvered almonds on top of the cake then cook it. The combined flavour of apples, cinnamon and almonds in this cake was very appraised by my family. So let’s get started!!

English Muffin Breakfast
Breakfast is my
favourite meal of the day; I like to take time and enjoy my coffee. Usually my
breakfast is a combination of sweet and salty flavours with a side of fresh
fruit. I go with skinny, low calories and low fat choices when preparing my
oats, eggs, pancakes, frittatas, toasts…etc
This morning, I had
these English muffin with almond butter and topped with Stove-top
baked bananas, but this time I used coconut oil to sauté the bananas and I left
out cinnamon. I just loved all these flavours together!!

Nectarine Watermelon Juice
Today, I am
sharing with you a low calories, light and delicious juice.
It doesn’t call
for that much of ingredients; you just need to use the ripest and sweetest
nectarine you have (mine was going really bad). Watermelon has to be sweet as
well because it really does make the difference.
Usually, I use
bananas to sweeten my smoothies. But today, I didn’t feel like drinking a thick
smoothy and also I didn’t want to lose the nectarine and watermelon flavours.
So I only added one date, my favourites, as a sweetener, to balance the flavours
out.

Fresh Blueberry Cake - Skinny & Simple
Apple cake or ‘Gateaux aux Pommes’ is one of my favourite desserts. My aunty use to make us one, each time we go for a visit. Her recipe is so simple but to make it skinny, I had to change some of the ingredients. I did substitute apple sauce for oil to turn it into a no-fat cake and sugar cane for white sugar.
This time, I made this cake with fresh blueberries, now in season. There’s nothing like fresh fruits. My blueberry cake was incredibly moist with a nice bright color!!
