I came across this
salmon recipe on one of Ina Garten’s shows. She said that the salmon goes
perfectly with the earthy taste of the lentils…she was right; this recipe seems
so simple, and yet creates really amazing flavors in no time. I did follow the recipe for
Panko Crusted Salmon, but the barley & lentils recipe is one of mine. The
parsley and olive oil flavor the lentils and barley so well. Sometimes I add a pinch of cumin as well.
Budget friendly, skinny recipes that made me lose weight. It's not a diet...It's a life style.

Seafood Tortilla Wrap Pizza
Lazy
Sunday… lazy seafood pizza; you know when you are craving some delicious,
gourmet food but you’re so lazy to make it. You then choose to substitute the fresh
ingredients for precooked or canned ingredients.
I used tortilla wrap for the
crust, canned clams, canned tuna, smoked salmon and imitation crab meat.
It
did taste great but for sure fresh clams and crab would taste way better!

Scrambled Eggs with Smoked Salmon and Spinach-Skinny Simple Breakfast-Sunday
This is the
perfect breakfast for a lazy Sunday morning. I just love this combination of
eggs, spinach and smoked salmon. I do add Italian seasoning, but really you can
add any of your preferred herbs, like chives, parsley…etc.
Scrambled Eggs
with Smoked Salmon and Spinach works also for lunch or dinner; instead of the
toast, I add a side of sweet potato fries or sauteed mix vegetables.

Tropical Lunch-Pineapple Crab Meat Salad
This is a
personal recipe for all time quick lunch. I’ve been making this salad since I
changed my eating habits for more healthy and skinny choices.
I do like the taste of crab meat combined with the sweetness of pineapple and corn; it’s kind of sweet and tangy. The crab meat sticks I’m using are low in calories and fat; only 100 calories and 1%fat for 4 sticks.
Dijon mustard dressing is light and nicely balanced with the addition of pineapple juice.

Skinny Fish Tacos @ An Award
I originally
posted this recipe on February 15th, 2012 (Baked Tilapia Tacos). And since my family likes those Tacos, they’re
so light and fresh, I decided to give it a twist. To avoid using the oven during these hot days of summer, I
cooked the fish on top of the stove. And ... it worked perfectly.
I placed the same ingredients onto a large pan, covered it and cooked it over medium low heat until the fish was done and flaky.

Salmon Balls à la Marocaine
Sardine Balls in
tomato sauce is a classic Moroccan dish. You will say why am I using Salmon for
this recipe?? Well, I couldn’t find any fresh sardines, so I thought using
fresh salmon would work, since it has the same oily texture as sardines.
Paprika, cumin
and curcuma add the Moroccan taste to these Salmon balls. The sauce is thick
and zesty; you can smell bay leaves in it. Also, the addition of cooked rice keeps
those balls moist and melting in your mouth.
Tip: Warm or
cold, leftover is great for sandwiches!!

Prawns with Feta cheese and Basil
I’m back from my
holiday!! We’ve been to Vancouver, BC. It’s a great destination for holidays,
and fortunately we had a nice, sunny weather. One week away was very refreshing.
We visited so many
places in Vancouver, but personally I loved Granville Island. It
is considered one of North America’s best markets; fresh produce, gourmet
foods, baked goods and lots of seafood.
Also, we’ve been to a nice ‘fancy schmancy’ restaurant, as my daughter said. The House of Fish. One of the appetizers we ordered, was the Flaming Prawns with Feta Cheese. We really enjoyed that dish, combining prawns, diced tomatoes, roasted red pepper, basil and feta cheese.
On our way to
Vancouver, we stopped by Shuswap. Our friends T & S have a nice cabin
there and my daughter really enjoyed her time with her friend Niki . Here are
few snaps from our trip photos.

olive oil for butter in the sauce and I chose low fat feta cheese.

Summer Pasta with Zucchini, Colourful Peppers and Tuna
I am sharing
with you my favourite, under 30 minutes, lunch. Whenever I’m in a hurry and
don’t want to mess up with my eating, I would make this dish; It’s clean, delicious
and great for using up the vegetables in your fridge; I had some small
colourful peppers and two of the zucchini. And who doesn't have tuna or pasta in his pantry.

Baked White Fish with Olives and a Simple Tomato Sauce
I came across this
recipe on Jamie Oliver’s website and decided to have a take on it.
I used Basa fish fillets that I had already in my freezer. The sauce is so simple with lots of flavours from the garlic and the fresh herbs; the recipe is calling for basil but I didn’t have any so I used fresh oregano from my herb plants.
Also the olives and capers add a nice tangy flavour to the sauce.
I served it with some smashed baby red potatoes.

My Pad Thai Shrimp…Easy, Fresh and delicious
I’ve been craving
Pad Thai Shrimp for days, but didn’t want to have it from outside. I know it
tastes awesome in some restaurants, or even food courts. But I also know it’s loaded with
fat and sugar.
So I decided to
make my own healthy version, with less fat and better sweetener. I chose granulated
palm sugar Sucanat over white sugar because it has that caramelly more fragrant
flavour and not just sweetness.
Tamarind paste
is a new ingredient to me; I don’t have it and I don’t know how to cook with it.
It is said that it has a sour flavour, so I looked for a substitute. From my
research, I found out that the best sub is Worcestershire or lime jus.
I also added
mushroom, only because I had some in my fridge waiting to go.
My Pad Thai
Shrimp turned out delicious, fresh with a light touch of sweetness; not sticky or
over sweet like the prepared ones. I am so happy with my version of Pad Thai, and
what's more important to me, my husband agrees with that…Yey!!!

Skinny Salmon Patties
Back home in Morocco, we use fresh sardines to make these patties.
Serve these patties with your favourite side dish.

Garlic, parsley, cumin and paprika are the base for any Moroccan fish dish. I just substitute oats for flour and added tomato paste for moist patties.
I’ve tried them with fresh and canned salmon and it taste almost like sardine’s ones.

Crabmeat Stuffed Potatoes
When I baked these potatoes, I was thinking of some garlic/olive oil/cheese spread. Then I taught I should use the crabmeat leftover I had from another recipe. I added some cottage cheese (less calories & fat) and these Stuffed Baked Potatoes turned out so flavorful.
My tip for you. You can cook in advance the potatoes. Just wrap them in alumium foil and place them in a slow cooker, on high for 4 hours. Then follow the recipe for the stuffing.

Skinny Smoked Salmon Asparagus Omelette
We tried this omelette in a restaurant on our trip to Jasper for Easter holidays.
I had no description of the filling, only it says on the menu Smoked Salmon Asparagus Omelette. But you can taste loads of butter and cheese. So I decided to give it a shot my own
way.
Smoked salmon, roasted asparagus, 1 whole egg+1 white, olive oil and a tiny bit of low fat cheese. These are the only ingredients I use and it taste so fluffy and so light.
