Eggplant Frittata


Eggplants or aubergines are naturally low in calories, are fat free and are excellent source of fiber. Yesterday, I made a delicious skinny frittata with buttery sautéed eggplants, garlic and parsley...perfect for breakfast, lunch, snack or dinner!!

Moroccan Coconut Cookies

Moroccan Coconut Cookies are kind of macaroons, with a gooey texture in the inside and a crisp crust in the outside. They’re my favourite since I was little girl, asking my mom to make them for us.
Traditionally, those cookies are made with finely grated coconut, but I prefer to use coarsely chopped coconut. And because the dough is sticky we use orange blossom water to shape the cookies which gives them a nice flavour, in addition to the lemon zest.

Apple Cake with Cinnamon and Almonds

Since last week, I’ve been checking online all kind of new fall recipes. Pumpkin, apples, spices…so many delicious dishes and treats to choose from.
Yesterday, I went back to my Fresh Blueberries Cake, and I made it with apples and added some cinnamon. It is still a non fat, skinny, moist and tender cake.
Now the addition that takes this cake to a higher level is Almonds. I sprinkled silvered almonds on top of the cake then cook it.  The combined flavour of apples, cinnamon and almonds in this cake was very appraised by my family. So let’s get started!!

English Muffin Breakfast

Breakfast is my favourite meal of the day; I like to take time and enjoy my coffee. Usually my breakfast is a combination of sweet and salty flavours with a side of fresh fruit. I go with skinny, low calories and low fat choices when preparing my oats, eggs, pancakes, frittatas, toasts…etc

This morning, I had these English muffin with almond butter and topped with Stove-top baked bananas, but this time I used coconut oil to sauté the bananas and I left out cinnamon. I just loved all these flavours together!!

Nectarine Watermelon Juice

Today, I am sharing with you a low calories, light and delicious juice.

It doesn’t call for that much of ingredients; you just need to use the ripest and sweetest nectarine you have (mine was going really bad). Watermelon has to be sweet as well because it really does make the difference.

Usually, I use bananas to sweeten my smoothies. But today, I didn’t feel like drinking a thick smoothy and also I didn’t want to lose the nectarine and watermelon flavours. So I only added one date, my favourites, as a sweetener, to balance the flavours out.

Tuna and Peaches Verrine


Did you know that tuna and peaches go well together?? I didn’t, until yesterday.

I like to eat my lunch with fruits so even with small portions, I feel full. I was having tuna salad and I just grabbed one of my daughter’s snacks… a cup of diced peaches (no sugar added). I was surprised!! The taste and texture were amazing.

So to make something fresh, skinny and simple for summer time, the idea of Tuna and Peaches Verrine came to my mind…and it also makes an elegant appetizer. I like colourful food J

Watermelon Cucumber Couscous Salad

Let’s enjoy watermelon before it disappeared from shops.

This summer salad is one of my favourite. It is ready in no time and you get a mix of flavours and textures in your mouth…sweet watermelon, lemony vinaigrette, fluffy couscous and crunchy cucumber.
And don’t forget mint and parsley, you can add as much as you want and make this salad look as green as Tabbouleh salad.

Sweet Potato Hummus


The idea of this sweet potato hummus came from one of my favourite snacks. I like to spread hummus on a piece of crostini bread and top it with a slice of roasted (or slow-cooked) sweet potato. So since I love the taste of this combination, I decided to make my usual homemade hummus, with garbanzo beans, and add microwaved or steamed sweet potatoes to it.

You get the nutty flavour from Tahini and the sweetness from the potatoes…mmm you won’t be able to stop J

Cubed Fruits...Great for parties

We’ve been invited to a BBQ party, last week. Nice weather and great food; I particularly fell in love with a lovely fruit salad. It wasn’t actually a salad; it had cubed watermelon and pineapple, but no dressing!!!  

This appealing and amazingly simple fruit plate was a hit at the party. And since I am blogging about skinny and simple recipes, I thought that would be good to share.

Garlic Zucchini Patties

If you have any extra zucchini, waiting in your fridge for a recipe, these patties are an excellent way to use them up. Make the batter with 1 egg, flour and baking powder. Add onion, parsley and garlic for flavours and then grated zucchini. Quick, skinny and delicious patties for a light summer meal!!

I’ve been making Egg Omelette with Blue cheese Panini for a long time. It’s an easy and quick lunch or light dinner.

For an easy and quick appetizers or snacks, I thought small bites would work perfect. So I made a crostini topped with tomato slice and egg omelette with blue cheese & English thyme.

For my Goat Cheese Lollipops, I choose to make 3 variety: Pistachios, Dried peaches & Thyme and Pretzels.

Turmeric Roasted Cauliflower - Moroccan Spices

I was looking for some skinny snacks ideas and I came across Roasted Cauliflower recipe. I liked the idea. So I decided to try it with Moroccan spices.

Actually, Turmeric, ginger, garlic powder and lemon are used to make “Cauliflower with Lamb Tagine” and it does work  perfectly with Roasted Cauliflower.
As you can see in my photo, I also tried some florets with Lemon Pepper seasonning mix and olive oil. Really you can try any spice: Thai, curry, soy sauce…etc.

Roasted Pepper & Hummus snack

Roasting peppers under the broiler is an easy way to give them a nice grilling flavour.
I usually grill 3 or 4 peppers at once, peel them and keep them in a container in the fridge, for up to 5 days. Then I use them in my sandwiches, salads and snacks.
