Fennel and orange with simple lemon, olive oil vinaigrette. Refreshing and healthy summer salad!!
1 medium fennel bulb, thinly sliced
1 large orange, peeled and ends trimmed
Jus of a 1/2 lemon (2-3 tbsp)
2-3 tbsp Olive oil
Salt & pepper, to taste
Place a sieve over a medium bowl.
Cut and scoop out the orange segments and place them in the sieve over the bowl to collect juices.
Place the orange segments and fennel in a salad bowl.
For the vinaigrette dressing, combine juices from the orange, lemon jus, olive oil, salt and pepper in a jar with a tight fitting lid. Shake well and serve over fennel and orange salad.
