Fresh Blueberry Cake - Skinny & Simple

Apple cake or ‘Gateaux aux Pommes’ is one of my favourite desserts. My aunty use to make us one, each time we go for a visit. Her recipe is so simple but to make it skinny, I had to change some of the ingredients. I did substitute apple sauce for oil to turn it into a no-fat cake and sugar cane for white sugar.

This time, I made this cake with fresh blueberries, now in season. There’s nothing like fresh fruits. My blueberry cake was incredibly moist with a nice bright color!!




Ingredients:
  • 3 medium eggs or  4 egg whites
  • 2 cups blueberries
  • 1/3 cup granulated cane sugar or more
  • ½ cup flour
  • 1 tsp baking powder
  • 4 tbsp unsweetened apple sauce
  • 1 tsp vanilla extract

Directions:
Preheat oven to 350 degrees F (180 degrees C). Grease and flour a 9 inch round pan.

In a medium bowl, mix together the eggs and sugar. Add vanilla extract and apple sauce.

Incorporate progressively flour and baking powder. Mix well.

Pour batter onto the pan. Add in berries and gently push them down into the batter

Bake for exaclty 20 minutes. It riches a nice brown color. Dust it with some powdered sugar.

Serve it warm, at room temperature or cold from the fridge.

    1. Sorry Carrie, I do not have nutrition facts as it's an old family recipe. I just made it skinny by changing some of the ingredients. You can also substitute whole wheat flour for regular flour in the recipe.Hope you'll try it!!

  5. I made it and entered all of the ingredients on MyFitnessPal. If you cut it into 8 pieces, it totals up to a mere 116 calories! And I even used whole eggs! It was so delicious--I really want to try it with pears and apples in the fall!
