Skinny Fish Tacos @ An Award

I originally posted this recipe on February 15th, 2012 (Baked Tilapia Tacos). And since my family likes those Tacos, they’re so light and fresh, I decided to give it a twist. To avoid using the oven during these hot days of summer, I cooked the fish on top of the stove. And ... it worked perfectly.

I placed the same ingredients onto a large pan, covered it and cooked it over medium low heat until the fish was done and flaky.

  1. What is your favorite type of cuisine?
I like Italian cuisine, few ingredients and simple recipes for tones of flavors.

And of course Moroccan cuisine…at least once a week!!

  1. What do you like best about blogging?
I get to know other bloggers with the same interest and specially to know their opinion about my recipes.

  1. Link us to your all-time FAVORITE post/recipe you’ve written.
Only few ingredients-Chickpeas, onion, garlic, parsley, cumin and Tahini- for a delicious and flavourful, low fat Chickpea Patties-Falafel. Easy to make and works great for lunch, light diner or picnic.

  1. Do you have a bad cooking experience? What were you trying to make and what went wrong?
Once I tried to make crepes using brown rice flour. That was a really bad experience; usually I don’t have any problems with regular crepes, but these once were sticking to the pan, the texture was heavy, stiff and dry. Also I didn’t like the smell of rice flower in this recipe. I just dumped the whole batch.

  1. Who is your favorite Food Network TV Star?
My favorite Food network TV Star is Michael Smith. He cooks simple recipes and has so many tips and information about food around the world.

Also, I watch "Diners, Drive ins and Dive" (Guy Fieri ) and "Eat Street"; I get nice ideas for my recipes and I really enjoy turning those recipes into skinny dishes. Check out my Skinny Sweet Potato Poutine

  1. Do you have any tips on how you budget your time better so you can blog?
Sometimes, I plan ahead on making 2 or 3 recipes during the weekend. I take my photo shoots, and then during the week, I can blog without any stress. It doesn’t always work, with other family priorities, that’s why I’ m not able to blog regularly like I would.

  1. What do you normally eat as a snack, when you aren’t cooking up delicious new recipes?
I try to eat clean and skinny snacks.
I eat lots of fruits, for example cut up apples with unsalted peanut butter, fruits with puffed cereals. Or for proteins, I eat rice cake with sweet potato on top or roasted peppers and Hummus or fat free yogurt with nuts….Things like that.

  1. Do you have a personal trick or tip you’d like to share?
I cut up my vegetables as soon as I get home from the store and get them ready for quick and healthy week meals. Also, whenever I cook an oven pasta dish or any comfort food, I double the quantity and freeze for busy days.

  1. What is one item or dish you’d like to try to make that you haven’t yet?
I’ve never tried to make Risotto
