Baked Tilapia Tacos

This recipe is a quick, easy and inexpensive one dish meal. It is also a healthy meal since Tilapia is a fish loaded with protein with fewer calories.

6 Tilapia Fillets
4 scallions, chopped
½ red bell pepper, chopped
¼ cup fresh parsley, chopped
½ lemon juice
2 tabs olive oil, divided
1 medium avocado, sliced
Corn tortillas or Whole Wheat pita bread.

Preheat the oven to 375 degrees F (190 degrees F).
Grease a baking dish with 1 tabs olive oil and place the tilapia fillets.
Season the fish with the lemon pepper mix and top with scallions, red bell pepper and parsley.
Add the lemon jus and the last tablespoon of olive oil.
Bake for 20 to 25 minutes in the preheated oven, until fish flakes easily with a fork.

I served these delicious backed tilapia fillets in pita bread pockets, I've made the day before, with sliced avocado.

Preparation time: 5 minutes
Cooking time: 20 minutes
Servings : 4
