Garlic Zucchini Patties

If you have any extra zucchini, waiting in your fridge for a recipe, these patties are an excellent way to use them up. Make the batter with 1 egg, flour and baking powder. Add onion, parsley and garlic for flavours and then grated zucchini. Quick, skinny and delicious patties for a light summer meal!!



Ingredients: (4 Servings)

3 medium size zucchini stems removed and grated
1 whole egg or 2 white eggs
½ cup flour
½ tsp baking powder
½ cup reduced fat mozzarella cheese, grated
¼ cup parsley, chopped
¼ cup onion, grated
3 cloves garlic, grated
Black olives, sliced (optional)
Salt & pepper, to taste

Direction:

In a large bowl, whisk together the egg, baking powder and flour until you rich a batter consistency.

Add cheese, onion, parsley, garlic, salt and pepper. Mix well and then add grated zucchini and black olives.

Meanwhile, heat a large skillet over medium high heat and spray with olive oil.

Using a ¼ cup measure per patty, drop mixture onto the skillet and lightly flatten to ½ inch thick.  

Cook until lightly brown, for about 3 – 4 minutes on each side.

    1. Nice articles!!Changing my eating habits has been the best way, for me to lose weught. I do also exercise, but mostly at home. I have couple of Wii fitness games that I like…until I get bored and buy new ones.
